Coconut Shrimp Soup Recipe
Preparation time: 20 min
Cooking time: 40 min
150 grams Basmati Rice
6 pc Green Onion, finely chopped
3 tbsp Olive Oil
3 tbsp Curry Paste
400 ml Coconut Milk, canned
800 ml Hot Water
250 grams Wild Shrimp, cleaned
Prepare the products by chopping the green onion and measuring the other ingredients.
Heat up a wok pan and dry fry the rice until it is a golden color. Add the green onions and olive oil into the pan. Fry once again. Add in the curry paste and mix all the ingredients together.
Pour the coconut milk alongside the hot water. Mix well and bring the mixture to a boil.
In the meantime, finely chop the wild shrimp. When the mixture has been boiling for at least 7 minutes, add the shrimp. Let everything simmer together for 6 to 7 minutes more on medium heat.
Serve right away with a sesame cracker, a cracker of your choice or some toasted bread
