  • 3 yellow squash
  • olive oil
  • fresh basil and thyme

For the herb oil:

  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 2 tbsp finely chopped parsley
  • 1 grated garlic clove
  • 1/4 tsp salt
  • black pepper

For the breadcrumb topping:

  • 1/4 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 tbsp chopped parsley
  • 1/4 tsp salt
  • red pepper flakes

  • 8oz. orecchiette pasta
  • 1 tbsp olive oil
  • 1 minced garlic clove
  • 2 cups chopped spinach
  • 1 tsp chopped rosemary
  • juice of 1/2 lemon
  • 13 cup crumbled feta cheese
  • 2 tbsp capers
  • a pinch of red pepper flakes
  • grated Parmesan cheese
  • salt and pepper

Instructions:

  1. Slice the squash and pat dry with a towel.
  2. Cook the pasta according to package instructions.
  3. Heat olive oil in a skillet over medium-low heat. Add the rosemary and garlic and stir for a few seconds. Add the squash, salt and pepper and let cook on each side until lightly browned.
  4. Then, stir in lemon juice and toss in the spinach. Add the pasta with a bit of the water it was cooked in.
  5. Finally, stir in the feta, red pepper flakes and capers. Season and garnish with the parmesan.

Ingredients:

  • 4lbs. yellow squash
  • 1 cup sour cream
  • 1 egg
  • 2/4 cup + 1/3 cup breadcrumbs, divided
  • 1 1/4 cups shredded cheddar cheese
  • 1/2 cup chopped parsley
  • 2 tbsp dried chives
  • 3 tbsp butter, divided
  • 1 yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 cup shredded parmesan cheese, divided
  • salt and pepper

Instructions:

  1. Preheat the oven to 350 degrees.
  2. Add the squash to a pot of boiling water and let boil for about 5 minutes, drain and set aside.
  3. In a bowl mix the sour cream, egg, 1/2 cup breadcrumbs, cheddar, 1/2 cup parmesan, parsley and chives.
  4. In a saute pan melt 1 tbsp butter over medium heat. Add the onion and cook until golden brown, stir in the garlic and saute and additional minute.
  5. In the same pan add the squash and sour cream mixture and season with salt and pepper. Toss and transfer to an oiled baking dish, spreading it evenly. Cover with foil and bake for 20 minutes.
  6. In a bowl melt the rest of the butted and add 3/4 cup breadcrumbs and 1/2 cup parmesan, toss well.
  7. Take the baking dish out of the oven and sprinkle with the breadcrumbs mixture evenly. Return to oven and bake additional 10 minutes. Broil for about 2 minutes.

  • 2-3 zucchini
  • 1 yellow squash
  • fresh cilantro, basil, dill, chopped
  • 2 cups cheddar cheese
  • 1/2 cup pesto
  • 1/2 red onion, sliced

  • 2 tbsp butter
  • 1/2 onion, sliced
  • 1 zucchini, sliced

  • 1/4 cup grated parmesan

  3. Cover with the smoked gaude and transfet to the oven. Bake for about 20 minutes.
