Things you will need:

  •  a sieve
  • two medium-sized bowls
  • a silicone spatula
  • a whisk
  • a pancake pan
  • a ladle

Ingredients:

  • coconut milk – 240ml (or any other plant-based milk choice)
  • pumpkin purée – 1/2 cup
  • organic egg – 1 pc.
  • melted cow butter – 2 tbsp (or use coconut oil)
  • gluten-free flour – 1 1/4 cups (choose whichever flour you like most)
  • brown sugar – 2 tbsp
  • baking powder – 2 tsp
  • pumpkin spice – 1 tbsp
  • cinnamon powder – 1 tbsp
  • organic honey (for drizzling)
  • chopped walnuts (for topping)
  • dried cranberries (for topping)

Step-by-step Instructions:

  1. First, place the sieve in a medium-sized bowl. Then take the gluten-free flour of your choice and pour it into the sieve.
  2. Gently shake the sieve so that your flour is lump-free.
  3. After that, add the brown sugar, cinnamon powder, pumpkin spice, and baking powder.
  4. Mix the dry ingredients with a silicone spatula and leave aside.
  5. After that, pour the coconut milk into the other empty medium-sized bowl.
  6. Then add the pumpkin purée to the bowl with the milk. Mix it well using a whisk.
  7. After that, add one egg and the melted butter, and whisk well once again.
  8. Then add the dry ingredients and mix the batter, so it is smooth and lump-free.
  9. Move on to the pan. Grease the pan, scoop the batter with a ladle, and gently form a pancake.
  10. After you see bubbles appearing on the top, flip the pancake.  Repeat for all the pancakes.
  11. Finally, drizzle the pancakes with some honey, and add dried cranberries and walnuts on top if you want. Enjoy while they are still warm!
