Recipe
Marzipan or even simple almond paste is an absolute treat. This is a simple and easy recipe for homemade marzipan balls that won’t take you more than five minutes to make. You also don’t need any special skills or fancy equipment. Marzipan is super versatile. You can use it in baked pastry or to mold shapes for cake decoration. Why not try making traditional treats like marzipan balls. If you want, you can also shape them into hearts, stars, or whatever your heart desires.
Ingredients:
- 150gr almonds, peeled
- 75gr honey
- 2 tbsp coconut butter, melted
- 1 tbsp vanilla extract
- 2 tbsp almond extract
- 1/4 tsp salt
- Chocolate (of your choice)
Method:
- Put the peeled almonds into a food processor. Pulse until smooth. Keep in mind that depending on how smooth you grind the almonds the texture of your marzipan will change.
- Place a small amount of the almond flour to the side. No more than 2 tablespoons.
- Place the rest of the processed almonds in a large bowl. Add the honey, as well as the coconut butter, vanilla and almond extract. Make sure to also add in the salt.
- Mix well until all the ingredients are combined.
- Refrigerate the mixture for between fifteen and twenty minutes.
- After that remove the mixture from the fridge and start forming the marzipan into little balls. Make sure to do this on a rack.
- Take the chocolate and melt it.

- Make sure to pulse the almonds enough. This will ensure the almonds are fine ground powder and not grainy. This makes for a much smoother paste, especially when you need to use marzipan to cover cakes or to mold it.
- Spoonful at a time. With marzipan, it’s very easy to end up with way too much liquid in the mix, which will result in a gloppy mess. In order to minimize the chances of that it’s best to be safe and add a tablespoon at a time of any liquid. You need to add enough, so you can form a dough.

While we do need the mixture to be smooth, we do not want an oily mess in our hands. Oily marzipan is very difficult to work. It’s still quite delicious, but can’t really be molded into anything.
- Opt out the microwave for a steam bath. While you may be tempted to melt the chocolate in the microwave, it’s much easier to get a burning mess. Place a pot with some water on the stove and wait until it boils. Turn the heat down. Put the chocolate in a bowl. Then put the bowl on top of the pot and mix until the chocolate has melted.
